I have missed last 2 days of blogging. It has been a busy week. Yash now has to do homework at home. So my evenings are spent in that now. I have to really find time to continue my challenge. But I will persevere!
Tuesday was a quick day at work. I had a few meetings to cover so that meant no brekkie. Lunch was a quick dash to the food court to get some rice and chicken from the local Chinese. It was not the most delicious food but okay to fill the stomach. I was on child duties in the evening. Avi had some work to do and was out. So my evening was spent entertaining my inquisitive, curious son. For dinner, we had rajma with rice. Rajma is an indian curry version of the red kidney beans. They are nutritious and delicious. Below is the recipe of the same.
Ingredients
- 1 Cup Rajma (red kidney beans)
- 1/2″ Cinnamon Stick
- 2 green chilli, deseeded, finely chopped
- 1 Onion (Minced)
- 3 Cloves Garlic (Minced)
- 1/4 Piece ginger paste or coarsely ground ginger or grated ginger
- 3 Tbsp Tomato puree
- 2 tsp Coriander powder
- 1/2 tsp turmeric
- 1/2 tsp red chilli powder
- 1/2 tsp Amchur powder
- salt to taste
- Finely Chopped Coriander (optional)
Directions
- Soak the kidney beans or rajma overnight in enough water to cover the beans.
- Heat oil in a pressure cooker.
- Add the cinnamon stick and sauté for 30 seconds. Add ginger, garlic and onion to the hot oil. Sauté for a few minutes till the onions are translucent.
- Add the tomato purée and sauté for 1-2 minutes.
- Add all the spices and sauté till the oil separates from the mixture. Add the little water if the mixture starts sticking to the bottom of the pressure cooker.
- Add the soaked kidney beans with water. Add more or less water based on the amount of curry you want.
- Pressure cook for 30 mins. Let the steam escape before opening the pressure cooker.
- Garnish with chopped coriander and serve with boiled rice or rotis.
Wednesday was a back to back meeting day at work. So brekkie was on the run, a coffee and sourdough toast. Lunch was Maria and I at our favourite roast place. That place now has a queue two blocks long. But the food is declisous and good value. Sorry, I get so busy eating that I forget the pictures. But definitely the next time when I am there.
My boss had organised a dinner to celebrate my 10 year work anniversary and colleague’s farewell for maternity leave. Now, my boss is a foodie and a traveller. He loves trying new restaurants and new cuisines. So whenever we have a team dinner, we are always exposed to different food. Yesterday was no different. We went to a restaurnat called Ester whose menu was “different”. Not for faint hearted, you have to keep an open mind to have food there. I did exactly that and tried most things. That I had cramps in the night means that I am never having that food again but it was a good eye opening experience. Till tomorrow…..
