There are times in life when you come at crossroads and you have to decide what to do, which road to take. I have come across that situation a few time in my life and I can only say it has been a real test of my will power and strength. The roads that I have chosen so far have been good; there have been bumps on the way but the journey has taken me to good destinations. The experience has made me stronger and tougher but I still wonder from time to time what my life would have been if I had taken the road less travelled. What sort of a person would I have been? I wish life was like a novel where you could write a few different stories and endings. Alas!
It is becoming easier to eat at home and clean as the days pass. I have already started paying attention to what goes in my mouth and the temptation of eating out is becoming less and less. Today was a busy day, so breakfast was masala omelette with butter bread. I will share the recipe of masala omelette with you but it is the butter bread that I love with my omelette rather than toast. It is simply heating the bread in a dollop of butter on the pan. The lightly toasted bread tastes divine with the omlette (pronounced “amlet” in india).
After eating leftovers for lunch, I wanted to cook something interesting for dinner. So I made paneer, mushrooms and peas curry. I modified my existing recipe of paneer and peas curry to cook this one. It turned out to be better than what I expected. Both my boys loved it with piping hot rotis. Check out the picture. Masala Omlette recipe
Ingredients
- 1/4 Cup vegetable oil
- 1 Small brown onion
- 1/4 Piece chopped Ginger
- 1 green chilli, deseeded, finely chopped
- 1/4 tsp Garam masala
- 4 eggs
Directions
- In a bowl, add onion, chilli and ginger with eggs. Whisk all together. Season with salt and garam masala.
- Heat 2 teaspoons oil in frying pan over high heat until hot. Reduce heat to medium-low. Pour in the egg mixture tilting pan so egg covers base. Cook for 3 to 4 minutes or until egg almost set and both side golden. Slide omelette onto plate. Serve with toast.
