Sunday is called God’s own day. For us mere mortals, Sunday is the day to relax, spend time with family and cook good food. Cooking for me is therapeutic; not the daily meals kind but cooking feast for my family and friend. Sunday is usually the day when I cook what my darling husband demands – today being the cold winter day, he wanted to eat poori and subji. I thought I will make a variation and try and get some fibre in it. So I decided to add Palak(spinach) to it. The recipe is as below:
Palak Ki poori
Take some thawed chopped spinach. You can use blanched and puréed fresh one as well but I prefer the chopped frozen available in the super market as it is quick and easy to use. Add a little asoefitida( heeng) and salt in it. Now add flour as required and knead in a soft dough. Keep it aside for 10 mins.
Heat oil and roll some dough to make pooris. Add to heated oil to make fluffy pooris.
Alu matar paneer ki subji
Grind one onion and a couple of garlic into a paste. You can add ginger as well if u desire. Heat some oil and add a bay leaf and pinch of cinnamon in the hot oil. Then add the onion garlic paste and sauté till the oil separates. Then add tomato purée. Again, u can use chopped fresh tomatoes but I prefer purée due to the consistency. Add ground dry coriander, turmeric, dry mango powder, red chilli and salt to taste. Keep sautéing till you can see that it is cooked and the oil has separated. Add potatoes, peas and frozen paneer. Add half a glass water and pressure cook for 10 mins. Garnish with Garam masala and fresh coriander.
